The Zurich Cantonal Laboratory has published an important recommendation for storing cooking oil – especially olive oil – in table containers (17.05.2022). The aim is to preserve quality and taste for as long as possible. The recommendations are particularly relevant for restaurants, but can also be applied at home:
Important points:
- Temperature: Ideally 12-18 °C. Oils should only be left on the table during service and stored in a cool place afterwards. Avoid direct sunlight (e.g. on terraces) at all costs.
- Light protection: Oils should be stored in dark bottles (brown or green glass) or opaque containers – never in clear glass.
- Oxygen contact: Oil containers must be hermetically sealed. Open cans are unsuitable.
- Container size & cleaning: Maximum 50 cl per container. Before refilling, the container must be completely emptied, cleaned and dried.
These recommendations help to prevent oxidation and loss of quality – a simple but effective contribution to food safety and quality.
